Preheat the oven to 350°F for bread or 425°F for muffins.
Grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep) or silicone muffin pans.
In a mixing bowl, cream together softened butter and sugar.
Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with eggs, mixing until blended.
In a separate bowl, whisk together flour, baking soda, and salt - then add to batter.
Add vanilla extract and mix in chocolate chips.
Pour into prepared loaf pan or muffin pans.
For Bread: Bake at 350˚F for 55-60 minutes.
For Muffins: Bake at 425°F for 5 minutes before lowering to 350°F for 18 minutes.
Let rest for 10 min before transferring to a wire rack to cool.
