Strawberries & Cream Pastry Puffs
  1. Prepare egg wash by mixing 1 small egg with 1 tsp milk or water

  2. Brush puff pastry with egg wash

  3. Bake at 200°C (180°C fan) for 8-10 minutes, or air fry at 180°C until golden and crisp

  4. Allow pastry to cool completely

  5. Whip 250ml double cream with 30g icing sugar until soft peaks form

  6. Slice cooled pastry puffs in half horizontally

  7. Fill each puff with whipped cream, strawberry jam, and fresh sliced strawberries

  8. Dust with icing sugar before serving
