Chili Lime Shrimp Bowl With Coconut Rice And Mango Salsa
  1. To a pot add rice and coconut milk. Bring to a boil, reduce to a simmer and follow directions for cooking time on package. Optional: to the rice add some lime zest & juice.

  2. Meanwhile, prepare ingredients for mango slaw. Add to a large bowl and toss in lime juice. Set aside.

  3. Mix together honey, soy sauce, oil and seasonings. Mix well. Pour marinade over the shrimp and toss until all pieces are well coated.

  4. Heat a skillet to medium-high heat, drizzle with oil or butter, then add shrimp in an even layer cooking each side for 3-4 minutes and slightly caramelized.

  5. Assemble the bowl adding rice, shrimp, mango salsa, avocado and jalapeno slices, plus any additional garnishes of choice!
