Coat the sweet potato with 1 tsp chipotle seasoning, salt and ½ tbsp olive oil. Air fry for 20-30 minutes at 200°C until crispy.
Mix corn and cottage cheese together with ½ tsp chipotle seasoning, set aside.
Heat ½ tbsp olive oil in a fry pan, add chicken and remaining chipotle seasoning. Add a splash of water, cook for 10 minutes until browned. Remove from the pan and set aside.
Add the onion, capsicum, balsamic and a splash of water to the pan. Sauté for 5 minutes or until soft and caramelised.
Assemble bowls with sweet potato, chicken, veggies, cheese and avocado. Garnish with coriander to serve.
