Paneer Tikka Masala
  1. Mix hot oil, spices, ginger garlic paste, curd, lemon juice, besan, and kasuri methi whisk until smooth.

  2. Add paneer and vegetables, coat gently and rest.

  3. Place the coal in the stove top. Once it's hot place on steel cup and put it into a bowl and pour ghee and cover the bowl with lid for a brief.

  4. Arrange paneer and vegetables on skewers.

  5. Grill evenly with light ghee on all sides of the paneer until charred.

  6. Heat oil and ghee together in a pan.

  7. Add whole spices (bay leaf, cinnamon, cloves, cardamom, cumin seeds) and let them release aroma.

  8. Saute onions until golden brown colour.

  9. Add ginger garlic paste and cook till fragrant.

  10. Stir in spice powders and salt.

  11. Add tomato puree and cook for 15 minutes until oil separates.

  12. Remove the bay leaf and pour in water and bring to a gentle simmer.

  13. Add grilled paneer and mix gently, check for seasoning adjust if needed.

  14. Sprinkle garam masala, kasuri methi, and coriander.
