Creamy Peanut Noodles
  1. Make the Peanut Sauce: In a small bowl, combine the peanut butter, soy sauce, sesame oil, rice vinegar, oyster sauce, gochujang, and honey/sugar.

  2. Slowly add warm water, a tablespoon at a time, until the sauce reaches a smooth, creamy, and pourable consistency.

  3. Adjust seasoning to taste—add more soy sauce for saltiness, or more gochujang for heat.

  4. Cook the Ground Pork: Heat a tablespoon of vegetable oil in a skillet over medium-high heat.

  5. Add the ground pork to the skillet, breaking it up with a spatula. Cook for about 5-7 minutes until browned and crispy, stirring occasionally.

  6. Add the minced garlic and ginger and sauté for 1-2 minutes until fragrant.

  7. Once the pork is nearly done, drizzle in the soy sauce and stir to coat. Let it cook for another 2 minutes, then remove from heat.

  8. Cook the Noodles: Bring a pot of lightly salted water to a boil.

  9. Cook your noodles according to the package instructions.

  10. Reserve ¼ cup noodle water.

  11. Add the cooked noodles directly to the bowl with your peanut sauce.

  12. Toss the noodles and sauce together until they're fully coated and creamy.

  13. If the sauce feels too thick, add a little more noodle water to thin it out.

  14. Plate in a bowl.

  15. Spoon the cooked ground pork over the noodles.

  16. Garnish and Serve: Sprinkle matchstick cucumber on top for a refreshing, crunchy contrast to the creamy noodles.

  17. Optional Garnishes: You can also add fresh cilantro, crushed peanuts, or a few extra dashes of sesame oil to elevate the dish even further.
