Whisk together the warm milk, 2 tbsp honey, and 2 tbsp melted butter in a large mixing bowl.
Sprinkle 1 tsp of quick rise yeast on top and let it sit for 5 minutes until slightly foamy.
Whisk the yeast mixture together, then add 1 egg and whisk again.
Pour in 1 ¾ cup of flour and ¼ tsp of salt. Stir until a sticky dough forms.
Cover the dough with a towel and let it rise in a warm place for 1 hour or until doubled in size.
Transfer the dough to a floured surface and spread it evenly to about ½-1 inch thick.
Use a mason jar or cup to cut out circles of the dough, making 4 muffins.
Cook the muffins in a cast iron skillet over low heat, covered, for 6 minutes per side.
