Creamy Spinach Cod Bake
  1. Heat your oven to 375°F and brush a baking dish with olive oil. This is the kind of cozy bake that feels easy from the start.

  2. In a skillet, warm olive oil, then cook onion and garlic until soft. Add spinach and stir until it wilts (or heats through if using frozen).

  3. Pour in heavy cream and stir in Parmesan, red pepper flakes (optional), salt, and black pepper. Let it gently thicken, then stir in 1 cup mozzarella (mixed into sauce) until creamy and smooth.
