Fill a 10 quart kettle with peeled and sliced apples.
Add 2 cups water and ⅓ sq. butter.
Bring to a full rolling boil.
With lid on, cut heat to medium.
While apples are cooking (about 15 minutes), mix together 6 ½ cups sugar and ¾ cup instant clear jell.
Add the sugar and jell mixture to the apple mix.
Season with Apple Pie Spice (or cinnamon and nutmeg) to taste.
Stir and cook until thickened.
Have your bottles and lids scalding hot.
Put hot apples into the bottles and they will seal.
