  4. Shave the green cabbage and dice the cucumber

  5. Finely slice the spring onion and chop the snow peas

  6. Combine the shaved cabbage, diced cucumber, sliced spring onion, alfalfa, chopped snow peas, parsley, and mint in a large bowl

  7. Cook the marinated chicken thighs

  8. Toss the salad with the dressing

  9. Top the salad with the cooked chicken thighs
