Broccoli Soup
  1. In a pot over medium heat, add the ghee and oil. Fry the onions until golden brown.

  2. Add the ginger and garlic and saute until fragrant.

  3. Add the spices and green chili and saute till fragrant.

  4. Add the broccoli, carrots, potato, and tomato. Saute for a few minutes to let the veggies absorb the flavors.

  5. Add enough water to cover the vegetables, about 2-3 cups of water. Simmer until vegetables are soft, about 20 minutes.

  6. Cool slightly then remove the bay leaf and add the cilantro.

  7. Blend with a blender or immersion blender until smooth.

  8. Return soup to the heat. Add cream and season to taste.

  9. Serve warm with a squeeze of lemon juice.
