James Beard's 1951 Edition - Pumpkin Pie
  1. Pre-heat oven to 350*F.

  2. Prepare the pastry dough and place it in a pie tin.

  3. Mix all ingredients with the strained pumpkin and mix until well blended and pour into pie shell.

  4. Bake in 350* oven for about 45 minutes or until the edges are set and center is still a little bit runny.

  5. Serve with LOTS of whipped cream.
