Make homemade Cajun seasoning by combining smoked paprika, garlic powder, onion powder, ground black pepper, cayenne pepper, dried oregano, and salt.
Flatten boneless skinless chicken breasts and season with 20g of the Cajun seasoning mix.
Cook the chicken using cooking spray.
For the Cajun Fried Rice: Use 700g of pre-cooked and refrigerated white rice.
Sauté ½ diced red onion and 2 diced garlic cloves in 20g light butter.
Add 2 tsp of Cajun seasoning mix to the rice and combine.
For the Creamy Cajun Sauce: Combine 200ml low fat or fat free milk, 150g light cream cheese, 20g Parmesan, 1 tsp Cajun seasoning, and 10g light butter.
Store for up to 5 days in the fridge. The sauce can be stored separately (optional).
To reheat, add contents to a microwave-safe bowl covered with a damp paper towel for 3-4 minutes until heated through, mix well and enjoy!
