Oatmeal Apple Raisin Muffins
  1. In a mixing bowl, beat the egg, and then stir in the milk, raisins, chopped apple, and oil. Mix just enough to moisten the ingredients.

  2. Add the all-purpose flour, quick oats, sugar, salt, baking powder, M-K Ground Cinnamon, and M-K Pure Vanilla Extract to the wet ingredients. Stir until the ingredients are just combined. Do not overmix; it’s okay if there are a few lumps.

  3. Grease 12 muffin cups or line them with paper liners.

  4. Fill each muffin cup about ¾ full with the muffin batter.

  5. Bake at 400°F for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  6. Allow the muffins to cool before serving. Enjoy them either cooled or piping hot with butter or cream cheese spread.
