Garlic Lemon Pepper Chicken Musubi
  1. Leave out butter to soften.

  2. Wash rice thoroughly. Cook rice.

  3. Mince garlic. Cut chicken thighs into cubes and in a bowl, season with all the chicken seasonings above. Skewer chicken pieces. Line up chicken skewers in air fryer and cook at 400F for 18-20min, flipping them in halfway through.

  4. In a bowl mix softened butter and all sauce ingredients together. if butter is still too firm you may heat in microwave in pulses of 5 sec. lather lemon pepper sauce on chicken skewers.

  5. Cut 4 nori sheets into halves.

  6. Assemble musubi by filling ⅔ of your musubi mold with cooked rice. Sprinkle furikake. Press mold down all the way then release the outside mold while pressing down. Rice shape should pop out. Place a chicken skewer on top. (optional but helpful, you may ‘twist’ to loosen the chicken from the skewer beforehand to help remove later). Wrap with nori sheet with ‘shiny’ side outside and ‘rough’ side inside. Remove skewer.
