Preheat oven to 350°F. Line 18 cups of 2 (12-cup) muffin pans with paper liners.
Whisk 2½ cups whole-wheat flour, ½ cup almond flour, 1½ teaspoons baking soda, 1 teaspoon baking powder and ¼ teaspoon salt together in a large bowl.
In a blender, combine 1¼ cups banana, ¾ cup cottage cheese, ½ cup melted butter, ½ cup peanut butter, ⅓ cup maple syrup, 1 teaspoon vanilla and 3 eggs; process until smooth, about 30 seconds.
Add the banana mixture to the flour mixture; fold until just combined.
Divide the batter among the prepared muffin cups.
Sprinkle the batter with 2 tablespoons turbinado sugar.
Bake until a wooden pick inserted in the center of a muffin comes out clean, about 15 minutes.
Let cool in the pans for about 10 minutes before serving.
