Mix all the ingredients in a shallow rectangular pan
Cover and set aside for 30 minutes
Stretch and fold the dough
Cover and set aside for another 30 minutes
Stretch and fold and coil fold
Cover and set aside for another 30 minutes
Stretch and fold one more time and cover
Set aside until doubled
Preheat oven to 390°F with a sheet pan and an empty metal pan below it
Flour dough and flip onto floured surface
Gently stretch and shape
Cut and put onto parchment
Transfer parchment to hot sheet pan
Immediately fill bottom pan with boiling water
Close and bake for 20 minutes
Cool and enjoy
