  1. Mix all the ingredients in a shallow rectangular pan

  2. Cover and set aside for 30 minutes

  3. Stretch and fold the dough

  4. Cover and set aside for another 30 minutes

  5. Stretch and fold and coil fold

  6. Cover and set aside for another 30 minutes

  7. Stretch and fold one more time and cover

  8. Set aside until doubled

  9. Preheat oven to 390°F with a sheet pan and an empty metal pan below it

  10. Flour dough and flip onto floured surface

  11. Gently stretch and shape

  12. Cut and put onto parchment

  13. Transfer parchment to hot sheet pan

  14. Immediately fill bottom pan with boiling water

  15. Close and bake for 20 minutes

  16. Cool and enjoy
