In saucepan ver medium heat, cook the sugar (stirring constantly) until clumps form and then eventually until it melts into a silky amber liquid. be careful not to let it burn!
Once the sugar is completely melted, reduce heat to low and stir in the butter (it will bubble so be careful!) cook and stir constanlty until well comvined.
Very slowly pur in the heavy cream, stirring constantly
When all of the heavy cream has been added, stop stirring and increase the heat to medium and let boil for 1 min
Remove from the heat after 1 min and stir in the salt and vanilla bean paste
Let it cool and thicken up!
