Sticky Toffee Pudding With Apple Miso Caramel
  1. Make caramel by melting butter and sugar then adding in the cream.

  2. Pour boiling water over dates and let steep. Blend till smooth.

  3. Cream the butter and sugar together till smooth.

  4. Adding the date puree and vanilla.

  5. Whisk the dry ingredients in and then stir to combine.

  6. Butter and flour a ramekin. Place 2 tbsp of caramel at the bottom then add place one round slice of apple on the caramel. Pour the batter till it is ¾ up the ramekin.

  7. Bake at 350 for about 20 min till it is baked.

  8. Remove from the ramekin - pour more caramel over it.

  9. Serve with vanilla ice cream or lightly sweetened whipped cream.
