Roasted Butternut Squash With Cranberries, Goat Cheese & Shallots
  1. Toss squash and shallots with olive oil, salt, pepper, rosemary, and thyme.

  2. Roast at 400°F (200°C) until caramelized and tender.

  3. Mix in cranberries and sprinkle sage leaves over top.

  4. Finish with crumbled goat cheese and chopped pistachios before serving.
