Whisk 3 eggs, ⅓ cup cottage cheese, and a pinch of salt in a bowl. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the egg mixture and cook for 1 to 2 minutes, stirring often, until soft and creamy. Transfer to a plate.
In the same skillet, add another drizzle of olive oil. Cook ½ onion, 1 medium carrot, and 2 cups broccoli for about 5 minutes until slightly softened. Add 1 cup frozen peas and 2 cloves garlic and cook for 1 more minute. If the pan gets dry, add a splash of water.
Add 2 packed cups cooked rice and break up any clumps with a spoon. Stir in 2 tablespoons soy sauce, ¼ teaspoon ground turmeric, 2 pinches salt, and black pepper. Cook for 3 to 4 minutes, stirring occasionally, until the rice is hot.
Add the cooked eggs and 1 green onion. Stir gently to combine. Taste and add more soy sauce or salt if needed. Serve hot.
