Blend 1 block of silken tofu to make tofu paste
Mix 1 cup plain flour with 3-4 tbsp tofu paste (add bit by bit) until you have a scraggly dough
Form the dough into noodles using scissors
Heat 1 tbsp olive oil in a pan
Sauté 2 cloves sliced garlic and 1 small chopped red onion
Add 1 tbsp gochujang and remaining tofu paste to the pan
Add ⅓ cup pasta water to create the sauce
Stir in 2 tbsp nutritional yeast if using
Season with salt to taste
Combine the cooked tofu noodles with the sauce
