Chickpea Spinach Curry
  1. Heat oil in a large pan or skillet over medium heat.

  2. Add onion and sauté until soft and golden, about 5 minutes.

  3. Add garlic and ginger, cooking for another 1-2 minutes until fragrant.

  4. Stir in the cumin, coriander, turmeric, garam masala, and chili powder (if using), and cook for another minute.

  5. Add chickpeas, diced tomatoes, and coconut milk. Stir well and let simmer for 10-15 minutes, allowing the flavors to meld.

  6. Add fresh spinach and cook for another 3-4 minutes, until wilted.

  7. Add salt, pepper, lemon juice

  8. Garnish with cilantro
