    Dressing

  1. Mix onion and shallot with olive oil, lemon, sumac, and salt. Let sit 10 minutes.

  2. Whisk dressing ingredients until smooth.

  3. Add beans, olives, radishes, celery, and parsley to the onions. Pour over most of the dressing and toss gently.

  4. Rest 20–30 minutes. Finish with a drizzle of olive oil and adjust salt or lemon.
