Heat oven to 170C, Have a shelf ready in the middle of the oven without any shelves above it.
Scatter 1 roughly chopped onion and 2 roughly chopped carrots and some celery over the base of a roasting tin
Use a spoon to separate the skin from the breasts and massage garlic butter under the skin. Then cook the outside/ all over with more garlic butter.
Then a generous drizzle of olive oil and salt and black pepper
Season the cavity of the chicken liberally with salt and pepper, then stuff with 2 lemon halves
Put the chicken into the oven for 80 - 90 mins depending on your chicken weight (place read cooking instructions on your chicken)
Baste the chicken every 20 mins for the best results
