Halloumi Curry In A Hurry
  1. Add the halloumi to a bowl along with the curry powder and a drizzle of oil. Toss together so all the halloumi is coated in the marinade.

  2. Add them to a hot frying pan and fry until golden and crispy.

  3. Then chuck in the tomatoes and coconut milk and simmer until the tomatoes have softened and can be squashed with the back of a fork.

  4. Finally, add the spinach, mix and turn off the heat. Allow the spinach to steam naturally to retain its colour and goodness 😇

  5. Season if you wish.

  6. Serve!
