Country Pie
  1. Preheat oven to 350˚F. Brown ground beef over medium heat, about 8-10 minutes. Drain and season with salt and pepper. Set aside.

  2. In a large bowl combine ½ cup tomato sauce with beef, bread crumbs, onion, salt and pepper to taste, bell pepper, and oregano. Spread this on the bottom of a deep pie pan or 9”x9” baking dish - taking it halfway up the side of the dish.

  3. In another bowl combine remaining tomato sauce with rice, water, and ½ cup cheese. Add rice on top of beef “crust” and level with back of spoon. Top with remaining tomato sauce. Bake for 25 -35 minutes or until rice is cooked. Add remaining cheese and bake for 10 minutes more or until cheese is melted.

  4. Serve with a spoonful of salsa and dollop of sour cream.
