Thinly slice the red onions and place them in a clean glass jar.
Add in the black peppercorns, sliced garlic, bay leaves, thyme and salt.
Pour vinegar and water over the onions ensuring they are fully submerged. Let it cool to room temperature and then add the honey.
Seal the jar with a lid and place it in the fridge. They will be ready to enjoy after 2 hours.
Store them in the refrigerator for up to 7-10 days. Enjoy!
