Potato Roti
  1. Prepare the dough by combining 3 cups self rising flour, ½ tsp salt, and 1 tbsp sugar

  2. Add 1 cup water and 1 tbsp butter or margarine to the dry ingredients and mix until dough forms

  3. If using all purpose flour instead, add ½ tsp baking powder to the dry ingredients

  4. Prepare the potato filling by cooking 6 medium sized potatoes until tender

  5. Mash the cooked potatoes and season with 1 tsp salt, ½ tsp black pepper, and 1 tsp ground roasted geera

  6. Add hot peppers, culantro or bandanya, and scallion or eschallot to the potato mixture

  7. Roll out dough portions and fill with the seasoned potato mixture

  8. Cook the filled roti until golden brown
