One Pot Irish Chicken
  1. Preheat oven to 375°F (190°C).

  2. Mix all dry rub ingredients in a small bowl and evenly coat the chicken pieces. Set aside.

  3. In a large, oven-safe sauté pan, cook bacon until crisp. Remove bacon and place on paper towels to drain. Keep the bacon fat in the pan.

  4. Sear the chicken in the bacon fat until browned on both sides (it doesn’t need to be fully cooked yet). Remove from the pan.

  5. Drain most of the remaining bacon grease, leaving a small amount. Add the cabbage and sauté for 2-3 minutes until slightly wilted.

  6. Add the potatoes, onions, and chicken stock to the pan, scraping the bottom to release any flavorful bits. Stir well.

  7. Return the bacon (chopped) to the pan and mix it with the vegetables.

  8. Arrange the chicken on top of the vegetables and transfer the pan to the oven.

  9. Bake for 45-50 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  10. Serve hot and enjoy this hearty, comforting dish!
