In a bowl combine soy sauce, shaoxing wine, sesame oil, sugar, honey, garlic, hoisin sauce, salt, white pepper, five spice powder, and optional red food coloring and mix thoroughly.
Place your pork shoulder in a separate bowl and pour the marinade over it. Let it sit for at least 1 hour, or longer if you prefer.
Lube up your air fryer, then place in your pork. Brush on some extra marinade and cook at 350°F (175°C) for 18 minutes, flipping and basting halfway through.
Slice your pork thinly and place over a fresh bowl of rice. You can optionally serve with steamed greens.
