Chop garlic cloves and finely chop shallots
Season beef short rib with salt and black pepper
Coat beef with plain flour
In a braising pot, combine Massaman paste, garlic, and shallots
Add beef short rib to the pot
Pour in beef stock or bone broth
Add lemongrass stalks and lime leaves
Stir in light coconut milk, fish sauce, and brown sugar
Braise in the oven at 150°C (130°C fan / 300°F) for 2.5 hours until beef is falling apart
Finish with lime juice
Serve over jasmine rice
Garnish with sliced spring onions, red chilli, and black sesame seeds
