Mexican Black Bean Burger
  1. Add the oats to a food processor and blend until it has a flour consistency. Add the garlic, shallot and spices and pulse until chopped. Then add the lime juice, egg, beans and roasted red peppers, pulse until roughly chopped. Finally the corn and the carrot and pulse until just blended, you don't want to break up the corn.Let the mixture sit for 10 minutes.

  2. Heat a big frying pan on medium hight heat. Shape the the mixture into 6-7 burgers, depending on how big you like them. Fry the burgers in oil for about 5 minuted per side until golden brown.

  3. Serve with burger buns, lettuce, avocado, pickled red onions, chipotle mayo and a little cilantro.Enjoy!
