Mix seasoning PLUS 2 tbsp of the chicken broth to form loose paste. Add chicken, turn to coat – no need to marinate. Heat oil in large skillet over medium high heat, cook chicken 3 min each side until golden.
Remove chicken, shred (don’t worry if bits still raw inside). Meanwhile, lower heat to medium, add tomato paste, sugar, remaining broth and scrape out remaining taco seasoning paste from bowl. Stir, simmer, add chicken, simmer to reduce to thin syrup.
Use for tacos! Tortillas or crispy taco shells, top with diced onion, tomato, avocado, lettuce, finely chopped coriander and dollop of sour cream. No need to make a separate taco sauce!
