Preheat grill to medium-high or oven to 425°F (220°C).
In a bowl, combine shrimp, sausage, peppers, onion, garlic, and corn.
Drizzle with olive oil, season with Cajun spice, salt, and pepper. Toss well.
Divide mix onto 4 large foil sheets. Add lemon slices on top.
Seal foil tightly into packets.
Grill or bake 15–20 minutes, until shrimp are pink and cooked.
Carefully open foil, garnish with parsley, and serve.
