Italian Flatbread With Prosciutto And Fontina (piadina)
  1. Place flour, baking powder and 1 tsp salt in the bowl of an electric mixer fitted with a dough hook.

  2. Knead, adding lard one piece at a time, for 2 minutes or until well incorporated.

  3. Knead, gradually adding milk, on low speed until a dough forms.

  4. Transfer dough to a lightly floured work surface and knead for 6 minutes or until smooth and elastic.

  5. Enclose in plastic wrap and refrigerate for 30 minutes.

  6. Transfer dough to a lightly floured work surface and divide into 4 equal portions.

  7. Roll each portion out to form a 3 mm-thick oval shape.

  8. Working with one portion at a time, brush both sides with oil, place in a frying pan over medium-high heat and cook for 2 minutes on each side or until lightly charred.

  9. Top with the fontina, prosciutto and basil.

  10. Season with salt and pepper, drizzle with extra oil and fold in half.

  11. Serve with lemon wedges.
