Pound chicken to even thickness between plastic wrap.
Season chicken with salt and pepper.
Prepare 3 bowls: flour, egg + water, and breadcrumbs + cheese + seasoning.
Dredge chicken: flour → egg wash → breadcrumb mix. Press firmly.
Fry in ½ inch oil over medium-high for 3–4 mins each side.
Drain excess oil and return chicken to oven-safe pan.
Spoon marinara over chicken, top with mozzarella.
Bake at 350°F for 5–8 minutes until cheese melts.
Garnish with parsley and serve hot.
