Black Bean and Sweet Potato Veggie Burger
  1. Preheat oven to 200°C. Prepare a large parchment lined baking tray.

  2. Cook the sweet potato in the microwave (about 5-6 minutes). Remove the skin from the sweet potato and transfer the flesh to a large bowl.

  3. Add the black beans, corn, tamari, salt, cajun, paprika, black pepper and chili powder to the large bowl and mash all the ingredients together using a masher.

  4. Finely dice the red onion, red bell pepper and garlic and add to the bowl with the sweet potato mixture.

  5. Add in the rolled oats. Mix thoroughly.

  6. Scoop out about ½ cup of the mixture and using your hands, form it into a patty.

  7. Place the veggie burgers on the tray and bake for 15 minutes, then flip and bake for another 15 minutes (be careful when flipping as they will be delicate).

  8. Remove from oven and let cool for about 10 minutes so they firm up. Optional: you can pan fry them in a little olive oil for 3-5 minutes each side to make it crispier.

  9. Place on a toasted burger bun with desired toppings (avocado/guacamole, tomato, vegan queso, lettuce, red onion)
