Thai Pork Belly Lettuce Cups
  1. Dissolve the sugar in hot water, then add fish sauce, lime juice, chilli powder, garlic, rice powder and coriander

  2. Taste the dressing - it should have sour, salty, spicy goodness

  3. In a big bowl, toss together cucumber, shallot and pork belly

  4. Pour over the dressing and toss to coat

  5. Add all the herbs: coriander, mint and Thai basil, then toss again

  6. Serve in lettuce cups and top with extra toasted rice powder for crunch
