Dissolve the sugar in hot water, then add fish sauce, lime juice, chilli powder, garlic, rice powder and coriander
Taste the dressing - it should have sour, salty, spicy goodness
In a big bowl, toss together cucumber, shallot and pork belly
Pour over the dressing and toss to coat
Add all the herbs: coriander, mint and Thai basil, then toss again
Serve in lettuce cups and top with extra toasted rice powder for crunch
