In a bowl, mix the cottage cheese and egg until smooth. Add the almond flour, baking powder, salt, and garlic powder. Stir until a soft dough forms.
Divide the dough into small portions. Roll each piece into a rope, then gently tie into knots. Place on the prepared baking sheet.
Brush the knots with melted butter and sprinkle with shredded cheese if using. Bake for 15–18 minutes, until golden.
Brush once more with melted butter, sprinkle with parsley, and serve warm.
