Combine the flour, yeast and salt in a large mixing bowl. Add the water and stir with a wooden spoon until fully combined.
Cover the bowl with a damp tea towel and leave the dough to rest at room temperature for 12-18 hours.
Preheat the oven and place the dutch oven with its lid inside to heat up.
Shape the dough, transfer it to a baking paper, and place it in the dutch oven.
Bake the bread covered for 30 minutes, then uncovered for another 20-25 minutes until golden brown. Let it cool before slicing.
