Prepare your pasta while you cook
In a small bowl combine all the seasoning for the chicken with the olive oil and coat each chicken breast with the sauce
In a large pan over medium heat add butter until melted and place chicken into the pan and cook each side until golden brown and internal temperature reaches 165F or higher
Set chicken aside and add oil from sun dried tomatoes and place onion into the pan and sear for about 2 minutes
Add minced garlic and sear for another minute
Add tomato paste and sun dried tomatoes and mix until well combined
Pour in cooked pasta water and mix
Add heavy cream and mix again then all your seasoning, tasting as you go
Mix until well combined and add handfuls of spinach and cheese and mix until well combined
Mix in cooked pasta and evenly coat
Serve and enjoy
