Bloom gelatin in 4 tbsp filtered water and set aside (this just means to sprinkle it on top of water and leave to form a hard jelly like substance - do not mix)
Whisk egg whites until fluffy, around 3 minutes (use an electric whisk if you can)
Add honey, salt and vanilla and combine.
Gently heat bloomed gelatin until dissolved, then add to the bowl.
Whisk until foamy and cloud-like.
Pour into a ceramic or glass dish and set in the fridge for at least 2 hours.
Cut and enjoy on top of cacao for a delish gut supportive treat!
