mix together all dry spices, salt and pepper
season chicken generously with spice blend
Cook chicken breasts in heavy dutch oven over medium heat with a little olive oil
When chicken is fully cooked, remove and set aside.
Add Shallot, Garlic to pan, cook until fragrant
Add Sun Dried Tomato (¼ cup) and Tomato Paste (1 ½ tbsp)
If needed add in a bit more of the seasoning blend (2 tbsp)
Deglaze with and add Chicken Stock (6 cups) - simmer 10 to 15
Add Heavy Cream (2 cups) and Parmigiano Regiano (2 cups grated)
Add Unsalted Butter (3 tbsp) and then add spinach to the pot
Add in cooked chicken, either cubed or shredded and the Gnocchi (1lb) and simmer until gnocchi is cooked. 15. Serve
