Mash the boiled potatoes until completely smooth.
Add cornstarch, garlic powder, onion powder, paprika, oregano, cumin, salt, and black pepper. Mix until a soft dough forms.
Transfer the mixture into a ziplock bag and flatten evenly.
Freeze for about 1 hour until firm.
Cut open the bag and slice into sticks, then cut each stick in half to make shorter fries.
Fry at 350°F until golden and crispy.
Remove and lightly salt while hot.
Mix mayo and hot sauce for the dip.
Serve hot.
