Fuel To Go Muffins
  1. Mix together flour, sugar, cinnamon, baking powder and salt in a large bowl.

  2. Add the dried fruit, coconut, seeds, raisins, crushed pineapple, apple and carrots. Stir to combine.

  3. In a separate bowl whisk the eggs with the oil and vanilla.

  4. Combine the egg mixture with the dry ingredients and blend well. This batter will be very thick.

  5. Line muffin tin with paper baking cups.

  6. Scoop the batter heaping full into the baking cups, dividing equally.

  7. Bake at 350º F for 30-35 minutes. The tops should be golden brown and crispy looking.
