Hot Mum Pasta Salad (aka Roasted Tomato And Burrata Pasta Salad)
  1. Preheat your oven to 200’C.

  2. Add the cherry tomatoes to a roasting dish. Finely slice the garlic cloves and add along with a tbsp olive oil, the chilli flakes and a little salt and pepper. Roast in the oven for 25-30 minutes until soft and jammy, then remove and allow to cool.

  3. As the tomatoes roast, cook the pasta according to packet instructions then drain and allow to cool. Toss with a tsp pesto to stop it from sticking together.

  4. Whisk together the dressing ingredients, finely slice the parsley and set to one side.

  5. In a large bowl, add the pasta, drained chickpeas, roasted tomatoes, parsley and dressing. Tear over the burrata and toss everything together until completely combined. Serve and enjoy, or keep in airtight containers in the fridge for 3 days (best served at room temperature).
