Heat a drizzle of oil in a large, non-stick pan.
Add the bacon and fry until crisp and golden brown. Remove from the pan and chop into roughly 1-2cm pieces.
Add a little more oil to the pan and stir in the cavolo nero and the shallots. Fry for 5 minutes on a medium heat until soft.
Heat the oven to 200C (fan)
Place the mashed potato in a mixing bowl. Add the bacon, cream, black pepper and the shallots and kale. Add half of the grated cheese before giving it a really good stir until all the ingredients are combined.
Spoon the mashed potato into the pie crust, pushing it down and spreading it evenly with the back of a spoon.
Scatter the rest of the cheese over the top and bake in the oven for 25-30 minutes or until the top is golden brown.
