Boil chicken until pull apart tender.
Add all the ingredients to your shredded chicken. Mix and combine.
In a pan on high heat with oil, combine onions and seasoned chicken.
Press down or flatten with something heavy. Don't stir or touch for a few minutes to develop a crust.
Once you see a deep brown color, keep mixing until it's your desired crispyness.
Serve with white rice, beans or plantains.
