Mix flour, sugar, salt, and warm water in a large bowl.
Knead for about 10 minutes until smooth.
Cover and let rest for 15 minutes.
Melt butter and mix with oil.
Divide dough into 12 equal pieces.
Roll each piece into a small circle.
Layer circles in a bowl, brushing each with the butter mixture.
Let layered dough rest for 15-20 minutes.
Stretch each dough piece until very thin.
Mix all filling ingredients (feta cheese, Greek yogurt, eggs, and baking soda).
Spread filling over ¾ of the stretched dough.
Roll, fold, or shape as desired.
Brush with egg wash.
Preheat oven to 400°F (200°C).
Bake for 18-20 minutes, until golden brown.
